Waste Not Want Not - Sourdough Crackers

SOURDOUGH STARTER CRACKERS


If you happen to have a bit of leftover starter from your recipe (or make a bit extra especially for this like we do at Breadsmith HQ) then this is a great little way to use it up.

Formula

½ cup leftover sourdough starter

2 tablespoons mixed grain flakes

1 tablespoon mixed seeds

½ teaspoon herbs or spices

Salt and pepper

 
Protocol

Preheat the oven to 160 Celsius.

Grab a spatula and smear a thin (~1mm) layer of starter onto a roughly A4 sized sheet of baking paper.

Transfer to an oven tray (do this before the next step or all your toppings will fall off).

If you want to be fancy you can score these now into rectangles so that they break into nice even shapes when dry.

Sprinkle over your grain flakes, seeds, herbs or spices, and season with salt and pepper.

Bung it in the oven for 30 mins to an hour until dry.

Move to a cooling rack and once cool you can break the sheet into nice even crackers, or smash into shards depending on how the mood takes you.

 

Favourite combos

Mixed grain flakes, pepitas, chopped rosemary and chilli

Sesame seed and seaweed flakes

Oat flakes, flax seeds and cinnamon (hold off on the salt/pepper for this one)
